King Oyster Mushroom

King Oysters are an excellent, meaty cooking mushroom that allows you to apply a wide variety of cooking strategies. Because of the way this oyster grows it gets a totally edible and thick stipe. Cut into rounds these can be "scallops", cut into strips and seasoned they become "bacon." Excellent on the grill or baked, this mushroom never lets you down in the kitchen.
